My period seems to not only come once a month, but also makes an appearance when I do something different with my normal schedule. If I sleep later than normal, it shows up briefly, or if I eat at a different time, or take my meds at a different time, it also shows up then.

This week it's been on the heavy side, and I've felt anxious (like really bad) no appetite, sad feeling. I know I was stressing bad before it came Saturday, but it just seems like it's been even harder to relax since it's been here. I don't know if it's all in my head or what! I know it's causing something different to go on because (without going into too much detail) it's definitely noticeable that other parts if my body are more sensitive than normal. I'm wondering how profound an affect this is having on my anxiety as well?

Yes, it's these blasted hormones. They really cause me hell too. I have most of my anxiety problems near or on my period. Make sure you get enough vitamins and minerals. It's extra important around that time of the month. Iron is very important for when you're bleeding heavily too.
